Try this quick and easy baked oatmeal recipe for an unexpected morning treat. It's a mix between an oatmeal bar and traditional creamy breakfast oatmeal. There are so many different ways to add a little something extra to this recipe: Add fresh fruit like strawberries, blueberries, or raspberries. Add toasted coconut flakes. Add chocolate chips for something the whole family will love. You could also add extra nuts and seeds. 

Baked Oatmeal

quick-cooking oats

brown sugar

raisins

walnuts

baking powder

milk

applesauce

butter, melted

egg,

Cooking spray

Combine the first 5 ingredients in a medium bowl. Combine the milk, applesauce, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray. Bake at 375° for 20 minutes. Serve warm.


For as much sugar that goes in this, its not overly sweet. I felt the end product was a big soggy. Also, this recipe makes A LOT.

I've made this a couple of times now. The first time, I made it nearly as the recipe indicated, but I had to make a few substitutions to meet my son's dairy allergy. I left the sugar because I substituted the apple sauce with another egg, substituted the cow's milk for the cashew/almond protein milk, used a dairy free butter, and my family hates raisins in baked items so I eliminated that as well.The second time, I substituted the applesauce with pumpkin puree, only used 1 egg, still used the diary free milk, halved the sugar, added 1/2 teaspoon of cinnamon, 1/4 teaspoon of ginger, 1/8 teaspoon each of coves and nutmeg, and used 1/4 c roughly chopped pecans instead of walnuts. Still eliminated the raisins though! This was amazing and tasted just like our family pumpkin pie recipe! It was gobbled up!!!

Do you cook the muffins the same amount of time?

Excellent as written.  The only addition I added was some pumpkin pie spices...yummmm!

usually make steel cut oats in mini crock, so i was looking for something different.  this was great!   took others' suggestions using mashed banana, blueberries, cinnamon, craisins and 1/4c sugar.   i did add sunflower seeds instead of walnuts which might be better on the top, and used olive oil for the butter.  baked for a good 30 min, and was a bit creamy on the bottom, but maybe that's how it's supposed to be.  ?  still good.  will make again.   

Funny I recently rated another oatmeal recipe as not being sweet enough, and this one borders on being too sweet, but I say borders and it is easy to cut back on the sugar next time.  I love warm oatmeal in the morning but because I work I don't have time during the week to make it and I stay away from pre-packaged foods as much as possible, so I don't eat the packets.  This is a great solution, stores well as leftovers and warms up really well in the microwave.  The only real complaint I have is although this is so yummy, for the calories I don't find it as filling as a cup of oatmeal.  But it will still remain part of my morning lineup.

Meh, a lot of work/ingredients for this waste of oatmeal. Too sweet, just too much invasion of what should be a purist grain. I'll stick with my imported Flahavann's from Ireland porridge, adding a little brown sugar, raisins, and a few walnuts......yummy and only 2.15 min in the microwave or Jamie Deen's steel cut oats recipe. NOT THIS ONE!

I am eating them while typing!! So delicious and creamy! I didn't find them over sweet at all.....I also added cinnamon, and vanilla, and 1/3 blueberries since I hate rasins.....I don't usually have nuts in the house,,but, found a small bag of hazelnuts and added a few.....I also used fat free Lactaid milk......next time I will definitley add more blueberries.......I eat oatmeal and fruit every morning , and this is a nice change.....will be making it often :)  Ps. Will be adding more cinnamon next time.....I put in 1 tablespoon vanilla and love the hint of vanilla taste....

Delicious, but I have to admit I was skeptical; thinking is it a bar or what?!  I too halved the sugar, knowing in advance, I don't like anyting too sweet and it was the perfect sweetness for me.  Baked the night before, put in refrigerator and warmed the next morning, had a little over half a serving with egg whites and a cup of coffee, great breakfast.  Will def. be making again, trying some of the different variations that other reviewers suggested.

Love this for breakfast - and I don't even like oatmeal!  It's every bit as easy as it looks in the video. Delicious way to get the day off to a healthy start!

This recipe solved my healthy breakfast issue because I go to the gym in the morning before work and don't have time to make breakfast each morning.  So I make a batch of these every other Sunday in a 12 muffin tin and freeze them.  That way I can grab one, plus a small yogurt and a piece of fruit on my way out the door.  By the time I get to work it is defrosted, although sometimes I stick it in the microwave to warm it up.  I change the recipe each batch so it doesn't get boring.  Banana nut is my fav, but pumpkin, craisins, pepitas and pumpkin pie spices are good in the fall.  Add apple pie spices if you use applesauce or shredded apples.  I use old fashioned rolled oats and cook it 10 mins longer, 2% milk, half the sugar and no butter.

This oatmeal was perfectly sweet in my opinion. I didn't have applesauce so I used sour cream because it was the closest thing I had in terms of texture but in hindsight I should have used mashed bananas. Next time I will try to broil the oatmeal during the last couple minutes of cooking to get a crispier top

This was delicious!  I prepared it before I went to bed (NOT a morning person!) and took it out of the refrigerator while the oven was heating.   I used a couple of tablespoons of brown sugar and almond milk.  I can't wait to try it with pumpkin.  Definitely a keeper.

Delicious - made this for brunch.  Even my niece who eats nothing loved it.   It was a little dryer than I expected so it was better with a some vanilla almond milk over it.

Delish and oh so easy. I make with craisins instead of raisins and 1/4 cup sugar instead of 1/2, and it's perfectly lightly sweetened.

Delicious!!  I used craisins instead of raisins and pistachios instead of walnuts (because that's what I had on hand) and it turned out GREAT!  Yummy!!!

I made this for the first time today and it was great. I made a few modifications. I used 4 small Washington apples diced, 1/3 cup pecans, 1 tbsp cinnamon, 1/4 tsp allspice, 2 cups whole milk (all I had on hand), and old fashion oats. I increased cooking time to 25 min. and it turned out perfect. My 5 year old, Julianna,helped me make this and she loved it. This will be a regular for us now. Yum Yum!!

I usually add one chopped sauteed apple too.

Great! It definitely doesn't need the butter (or even the full sugar amount).  I add vanilla and cinnamon for some extra flavor and use different fruits/nuts depending on what I have.  The applesauce can also be switched out for pumpkin.

We love it! It's delicious. We cut back on the brown sugar but we will follow the original recipe next time. You should make it.

Used 1/2 almond milk &amp; 1/2 milk &amp; used a cup of applesauce instead of raisins. Added more almond milk &amp; milk when I eat it. Love.

Love this recipe! I change it up sometimes. My favorite variations uses pineapple instead of apple sauce, plus 1 tsp vanilla extract, cinnamon, and nutmeg, and about 1/4 cup brown sugar. And I cook it for about 30 minutes so it's dry...like an oatmeal cake. So delicious!

Very yummy! I changed a couple things. I used 1/3 cup of splenda brown sugar mix instead of the regular sugar. I didn't have walnuts, so I used a couple tbsps of pecans. I didn't have fat free milk, so I used 1%. I also added a bit of nutmeg. It came out great. Just enough sweetness. A nice change from regular oatmeal.

Served with Greek yogurt and fruit. My husband couldn't get enough. I will definitely keep this as a great brunch dish as well as a weekend treat for my husband and myself.

I'm not sure if this is just me since this recipe received raving reviews but I found this version of baked oatmeal way too sweet and somewhat artificial tasting (even though I didn't put anything but natural ingredients in the batter). I actually halved the amount of sugar yet still found it way too sweet for my liking. I have been making baked oatmeal for a while now but have always used the recipe in Gourmet magazine. This one calls for 3 cups of oats, 1/4 cup sugar, 1/2 cup milk, 1/2 cup applesauce, 1/2 cup plain yogurt, 1/4 cup canola oil, 2 eggs, vanilla extract, as well as 2 tsp baking powder, raisins and cinnamon. You still bake it in an 8'' square pan but for a little longer because of all the oats. So this version is basically a little less creamy and more oaty as well as less sweet and more of a breakfast food. I like the idea of putting in pumpkin or mashed banana though in place of the applesauce, maybe I'll try that next time :)

I followed the recipe the first few times, but this last time I didn't have any applesauce, so we used mashed up banana instead...I don't think we will ever make it with applesauce again! It was SO moist and delicious and the banana flavor was much stronger than the applesauce...I had to give some to my neighbors to quit eating it!

My family loved this!  I added 1/2 teaspoon cinnamon.  Next time I will double the recipe!

This was soooo delicious! I also used pumpkin instead of apple sauce since i didn't have any. Used vanilla soy milk, and also added some cinnamon and allspice. It's very sweet, would probably still be delicious with less sugar and butter like someone else said.

Due to health issues, could I substitute soy milk in place of the milk that is called for in this recipe.

Delicious! I used pumpkin instead of applesauce and only used 1/3 cup of brown sugar. It was plenty sweet.  I served it with cinnamon and almond milk. I like a bigger portion so for me it only makes 4 servings.

This is such a great breakfast!!  I halved the brown sugar and totally skipped adding butter to keep the recipe as healthy as possible.  I also substituted pumpkin in place of the applesauce and used pecans rather than walnuts.  Obviously I made some big changes to the flavor itself, but I am sure this would have been great following the original recipe as it was probably the best oatmeal I ever had.  Also, being able to just pop it in the microwave in the A.M. was a huge time and energy saver!!  :-)

Outstanding.  I modified the recipe based on some of the other reviews.  I placed the oatmeal in a jumbo muffin pan.  Turned out great!  This is a great alternative to regular oatmeal.

I made this for the first time yesterday as a healthy snack for food service managers. I used pumpkin (great source of Vitamin A) instead of the applesauce and tossed in some craisins and a small amount of Ghiradelli dark chocolate chips (flavonals and flavor!). I doubled the recipe and it turned out great with more baking time. I am going to try to make it with yogurt instead of the milk next time and cut the sugar down by a 1/3.

I absolutely love this recipe. I stir all ingredients together the night before, let them soak in the fridge over night then simply bake it in the morning. Great for guests and/ or brunch. Everyone loves this.

Even better with added fruit like a banana or fresh plums.

This was delightful! If you are looking for a slightly different oatmeal from the regular faire I think this is probably the way to go. I used vanilla almond milk mixed with skim and egg substitute with a splash of vanilla and cinnamon and nutmeg for some extra spice. I also didn't put any butter or sugar the oatmeal because I don't think it needs it and I like to make my breakfasts as healthy as possible. Yum Yum Yum.

I loved this.  It was kind of like an oatmeal cake but not quite as sweet.  I did make a few modification just because I hadn't been to the grocery store.  I was a couple tbsp short of milk so I used fresh orange juice.  I added cinammon and vanilla.  We hate raisins so I put in chopped apple.  I omited the walnuts because my daughter doesn't like them.  I can't wait to have this again tomorrow!!

This was such a quick and delicious breakfast dish. I used the old fashoned oats so I cooked it for 30 minutes instead of the recommended 20. It turned out perfect! I also substituted dried cranberries for the raisins and added some chopped walnuts on top after it was cooked. I will definitely be making this again!

This is a wonderful base recipe in need of nominal modification. I made it today and was amazed how similar it was in taste to a local restaurant's baked oatmeal. Preparation was easy and fast. I added nutmeg, cinnamon, vanilla extract, fresh blueberries (in lieu of raisins), chopped granny smith apples, and frozen sliced peaches as a middle layer. I estimate this necessitated 10-15 minutes of additional baking time, but it was well worth it! I added powder sugar on top and my family enjoyed a hearty nutritious and yet delicious meal! I highly recommend this dish- I don't even like oatmeal! A true crowd pleaser. I will add more walnuts and raspberries next time to have the sweet and tart combination.

I use dried blueberries instead of raisins. I hate raisins. I also ran out of applesauce, so I used half a cup of fresh shredded apple. Even better.

I made this for Christmas morning, adopting several of the suggestions (craisins instead of raisins, added a splash of vanilla) and it was delicious!  I was pleasantly surprised, as was my husband who had seconds.  The only change I would make would be to cook it a little less next time to make it slightly creamier.

Made this for an office breakfast and was a great hit.  I used dried cranberries and pecans which is what I had on hand.  I also used the Splenda Brown Sugar and Egg Substitute.  I had fruit toppings with warm skim milk to go on top when serving.

This recipe is DELICIOUS. I did substitute dried cranberries for the raisins and old-fashioned oats for the quick-cooking. Added about 8-10 more minutes cooking time, but turned out thick and cake-like. Which is my preferred oatmeal consistency. Also tossed in some extra walnuts. Flavors are delicious. And it's easy to make.
