Step 1
Preheat oven to 180°C/160°C fan-forced. Grease base and side of a 2L baking dish. Place dish inside a deep roasting tray.
Step 2
Place butter, sugar, milk, limoncello, juice, flour and egg yolks in a large bowl. Whisk until well combined and smooth.
Step 3
Place egg whites in a separate large bowl and whisk until soft peaks form. Fold one-third of the egg whites into the limoncello mixture until very well combined, then gently fold in remainder until just combined. Pour into prepared dish, then carefully pour enough boiling water into the roasting tray to come halfway up the side of the baking dish.
Step 4
Bake for 40-45 minutes until just set and golden. Very carefully remove dish from roasting tray and immediately sprinkle top evenly with extra sugar. Use a kitchen blowtorch to melt and caramelise top to form a brulee crust.
Step 5
Carefully bring pudding straight to the table, top with ice cream and serve with extra scoops alongside.
