Set your sous vide to 135 degrees fahrenheit. 

Wash all of your lemons thoroughly under warm water. 

Peels the skin off of 6 lemons, and try to get as little of the lemon pith as possible because it will make the limoncello more bitter.

Place the lemon peels into three mini mason jars or one large mason jar and fill with vodka.

Seal the mini mason jars and place in the sous vide water bath for 3 hours.

Remove the jars from the water bath. While the jars are starting to cool make your Purecane simple syrup by boiling the water

When the water is boiling mix in the Purecane and stir till its dissolved, remove from heat.

Open each individual jar and filter out the excess lemon rinds. 

Sweeten the limoncello to taste with your Purecane simple syrup, we preferred 4 tablespoons per mini mason jar, or ¾ of a cup total.

Chill each mini mason jar in the freezer for at least 2 hours.

Shake or stir before drinking as some natural separation may occur.

Preheat the oven to 350 degrees F. Place one oven rack in the middle of the oven, and one at the bottom. Place a large rimmed baking sheet on the bottom rack to catch any leakage. Line the bottom of a 9 1/2 inch springform pan with parchment paper. Then clamp the ring around the bottom tightly. (Trim the paper edges if desired.)

For the Crust: Place the Biscoff cookies, sugar, and salt in a food processor. Pulse until the cookies are finely ground. Then add the melted butter and pulse again to combine. Pour the crust mixture into the prepared pan. Press the crumbs with your hands over the bottom of the pan, and about 2/3 the way up the sides of the pan. Bake for 10 minutes.

For the Limoncello Cheesecake Filling: Meanwhile, place the cream cheese in the bowl of an electric mixer. Beat on high for 2 minutes to soften and fluff the cream cheese. One at a time add the eggs, not adding another egg until the previous egg is completely blended in. Scrape the bowl with a spatula. Then add the remaining ingredients and beat until completely smooth. Pour the filling into the crust and bake for 45 minutes.

For the Sour Cream Topping: In a medium bowl, mix the sour cream, sugar, and limoncello until smooth. Once the cheesecake has baked and is mostly set in the middle, spread the sour cream filling over the top of the cheesecake and place back in the oven for 10-12 minutes.

Cool the cheesecake on the counter for 1 hour. Then place in the refrigerator to chill and set for at least 3 hours. Later, take the ring off the springform pan and slide the cheesecake onto a cake plate. Slice and serve cold.

Limoncello Mocktail

1½ oz freshly-squeezed lemon juice*

oz oleo saccharum**

2+ oz limoncello- or lemon-flavored sparkling water, unsweetened

Add the fresh lemon juice and oleo saccharum to a cocktail shaker filled with ice.

Shake well, about 20 seconds.

Strain into a lowball glass filled with crushed ice.

Top off the glass with your sparkling water.

Garnish with a fresh or dehydrated lemon wheel.

Set the Sous Vide  to 135 degrees.

Thoroughly wash lemons in hot water to remove wax and pat dry.

Using a vegetable peeler, remove the zest from the lemons, avoiding any the bitter, white pith.

Place lemon zest into a quart sized mason jar and top with vodka, leaving a half inch of space from the top of the jar.

Cook for 2 hours.

Meanwhile, prepare the syrup: Heat water and sugar in a saucepan over medium-high heat. Stir to dissolve sugar. Remove from the heat and let cool to room temperature.

When the timer goes off, remove the jar from the water bath. Strain through a fine mesh strainer set over a large pitcher or bowl. Stir in the simple syrup. Chill and serve.

This recipe needs good quality Amalfi lemons, and 95% pure grain alcohol (although you must never drink this neat). The alcohol isn’t easily available in the UK, but it is sold in most grocery stores across Europe and is available from gerrys.uk.com.

Pare the zest from all the <a href="/glossary/lemon" target="_blank">lemons</a>, taking care not to include any white pith. Put the zest in a large clean jar and pour over the vodka. Cover with a tightly fitting lid and leave for a week, shaking the jar each day.

Put the sugar in a heatproof bowl and pour over the boiling water, stirring until the sugar has dissolved. Add the vodka and peels and leave for a further week, shaking the jar regularly.

Limoncello Recipe {How Italians Make It}

organic lemons (or 9 small lemons)

water (1080 milliliters)

Using a vegetable peeler or a small sharp knife, peel off the lemon zest as thin as possible. We only need the yellow part. If you happen to cut any white pith together with yellow zest, just trim off any white spots with a sharp knife.

Place all the lemon peels in the jar with alcohol.

Leave to macerate for at least 7 days, best 3 weeks or more.Make sure to keep the bottle out of direct sunlight.

Prepare sugar syrup. Mix water and sugar in the pot saucepan. On a medium heat continue to stir in the sugar until it’s completely dissolved. Let the syrup to simmer until boiling. Remove from the heat and allow to cool completely.

In a large saucepan/mixing bow/ or a container add lemon infused alcohol. Continuously stirring start adding the sugar syrup. Once you’ve added 5 cups taste. Limoncello will be pretty strong. Add more sugar syrup and taste again.

Add more sugar syrup for a milder taste, reduce it for a stronger limoncello.I don’t recommend diluting the alcohol base too much.

Once you’ve reached the perfect flavor, bottle your limoncello in glass bottle using a funnel.

Chill in the freezer for at least a few hours before serving.

Preheat oven to 350 degrees. Butter and flour two 9 inch round cake pans and line bottom with a parchment round. Set aside.

In a stand up mixer or large bowl with an electric mixer, cream together the butter and sugar until well combined. Add the ricotta and blend until light and fluffy, about 5 minutes. Mix in the eggs, one at a time, incorporating well. Mix in the Limoncello, lemon zest, and vanilla.

In a seperate bowl, whisk the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet in two batches, until just combined.

Pour the batter into prepared pans and smooth as needed. Bake 30-35 minutes, or until the cake is set and a toothpick inserted comes out clean. Let cool in pan at least 10 minutes before turning out onto a wire rack to cool completely before frosting.

To make the Limoncello Cream Cheese Frosting, in a large bowl cream together the butter and cream cheese. Add in the powdered sugar, Limoncello, and zest. Mix until well combined. Place one layer of the cooled cake on pedestal or cake plate and spread on about a cup of frosting. Place on the top layer of the cake and spread the remaining frosting all over the cake. Sprinkle on candied lemon peel if using.

Wash the lemons then dry them with kitchen paper. Peel the lemons with a ceramic potato peeler. Take care to remove ONLY the zest (yellow part), leaving the white spongy one on the lemon, as it could give a bitter taste to the liqueur.

Keep in infusion

Place the lemon zest in a large airtight glass jar then pour the alcohol (or the Everclear or the Vodka). Let them infuse for 2 weeks in a cool place out of direct sunlight. Better cover the jar with a cloth to be sure that it remains in the dark. During this time, SHAKE THE JAR EVERY DAY to mix the ingredients well without ever opening the jar.

Make the sugar syrup

After the required infusion time, you need to make the syrup. So put the water and sugar in a saucepan and, over low heat, bring to a boil. Stir constantly until the sugar is completely dissolved. Then let it cool down.

Filter

Now filter the liquid with a sieve and remove the lemon zest.

Final step

Once the syrup is cold, add it to the infusion of alcohol and lemon zest and mix well. Now pour the Limoncello into glass bottles with hermetic closure or cork stopper. Store the bottles in a cool, dark place for one week.

The filling is a creamy lemon custard that’s both sweet and tart, without being too much of either. Try this perfect summer dessert today!

Creamy Limoncello Lemon Bars

all-purpose flour

Start by zesting and juicing the lemons until you have a tablespoon of zest and 1 cup of lemon juice.

Preheat oven to 350°F / 180°C. Prepare a glass or ceramic coated 13x9 baking dish by spraying the bottom and sides with cooking spray or greasing with butter. Trim some parchment paper to make a sling and spray or butter the top of that as well. Set it aside.

Now make the shortbread crust. In a mixing bowl, add 1 ¾ cups all-purpose flour, ⅔ cup granulated sugar, ¼ cup corn starch, and ½ teaspoon salt. Whisk to combine everything. Pour in the melted ¾ cups unsalted butter (and 1 teaspoon of extract if using any) and mix with a wooden spoon or fork until a loose dough forms.

Dump the dough into the prepared 13x9 baking dish and spread it out across the bottom. Using your hands, press the dough down into the dish and try to spread and level it out as evenly as possible. Bake the shortbread layer for 18-22 minutes, until it just starts to show some browning.

Shortbread Crust:

While the crust is baking, prepare the custard layer. In another mixing bowl, add 2 14-oz cans of sweetened condensed milk, 2 eggs, and 4 egg yolks. Whisk together until no visible streaks of egg remain.

Now add 1cup of lemon juice, 1 tablespoon lemon zest, and 3 tablespoons of limoncello. Whisk again until the lemon juice is fully combined and there’s no layer of separated juice.

As soon as the bottom crust has cooked, remove the dish from the oven. Pour the lemon mixture over the hot crust and make sure the layer is fully spread out and even. Place the baking dish back in the oven and lower the temperature to 325°F / 162°C. Bake for another 20 minutes. The creamy limoncello lemon bars are done when the top layer no longer looks wet and barely jiggles at all when you shake the dish.
