Step 1
To make the dough, start by adding the warm water to a bowl with the yeast, honey, salt and olive oil and mix until the yeast and honey are dissolved.
Step 2
Add the flour and use a wooden spoon to mix until combined.
Step 3
Once the dough is a shaggy mess, remove it from the bowl and place it onto a floured surface and knead for 8-10 minutes or until smooth.
Step 4
Drizzle some oil in the bowl that you mixed the dough in originally, place the dough back in the bowl, cover it with a tea towel or cling film and leave it in a warm place to double in size. This will take around 1 hour.
Step 5
After the hour, turn the dough out onto a floured surface and knead all of the air out that has accumulated. Cut this into 12 even pieces then, using the palm of your hand, roll into tight balls.
Step 6
Roll each ball out to around 20-25 cm in diameter and cook immediately.
Step 7
You can either cook these in a pizza oven or if you don't have a pizza oven, a large cast iron pan in your kitchen oven set at 250°c works well also.
Step 8
They won't take long to cook in the pizza oven (they took about 60 seconds) but if you're using your kitchen oven they might take an extra 60 seconds.
Step 9
Once they're out of the oven, serve warm, filled with fresh mozzarella, tomato and basil or anything your heart desires!
