Wash the potatoes in warm water.

Slice the potatoes, then cut them into thin fries. Cut them as thin as you like your fries.

Preheat the air fryer to 380°F / 195C. (see notes for oven baking)

Drizzle the potatoes with 1 tbsp olive oil and sprinkle with sea salt and paprika. Mix with your hands to ensure the fries are evenly covered in oil and salt.

Place the potatoes in the air fryer basket in a single layer. Air fry for 12 to 15 minutes, flipping halfway, or until crispy.*
Step 6
To make the chimichurri, add all ingredients in a blender. Blend until everything is well combined and smooth.
Step 7
Serve the fries with chimichurri sauce and enjoy hot!
