Step 1
To make the chocolate peanut butter mousse add all mousse ingredients to a blender and blend until completely smooth. (To melt chocolate use a double boiler method or melt slowly in the microwave).
Step 2
Heat a pan on medium heat and add coconut oil. Once heated, add banana slices and sugar on each slice. Flip each slice over after 1-2 mins and allow to caramelize.
Step 3
To assemble toast: Spread a thick even layer of mousse on toasted slice of sourdough, top with caramelized bananas, toasted almonds and optional melted chocolate (mixed with olive oil). Enjoy!
