Step 1
Heat the olive oil in a large pan on a medium heat and add the onion and pepper and fry for a few minutes until they start to soften.

Add the beef mince and cook for about 10 minutes until starts to go a bit crispy and really gets some colour on it. Don’t just cook until it’s no longer pink. Cooking it for much longer (so it starts to look the same colour as a burger on the outside) gives the dish SO much more flavour.
Step 3
Add the garlic and fry for a further 30 seconds.
Step 4
Add the mixed herbs, pesto, chopped tomatoes and salt and water. Cover with a lid and simmer for about 10 minutes.
Step 5
Just before serving stir through the cream cheese.
