Step 1
Transfer the roast from the refrigerator about 60 minutes before cooking.

Preheat the oven to 325 degrees F.

Season the roast with the salt and the pepper.

Bake the roast for approximately 25-30 minutes for every pound of meat, removing the roast from the oven when it's approximately 10 degrees shy of medium doneness, which is about 145 degrees F (the roast will continue to cook while it rests). For a 3-pound roast, cook for about 1 hour 15 minutes.

Let the roast rest for at least 15 minutes, tented in aluminum foil to keep warm.
