Step 1
Preheat the oven to 325 degrees Fahrenheit (160°C). Spray a 12-count donut pan or two 6-count donut pans with nonstick cooking spray. Set aside.
Step 2
In a large bowl, whisk the pancake mix and sugar until combined.
Step 3
In a separate bowl, lightly whisk the eggs with the milk, melted butter, and vanilla until well blended.
Step 4
Pour the wet ingredients into the dry ingredients and mix with a spatula until almost combined. Add any mix-ins, then stir gently until no streaks of flour are visible.
Step 5
Spoon or pipe the batter into the prepared pan(s), filling each cavity about 3/4 full. Bake for 9-11 minutes or until the donuts are lightly golden and spring back when touched. Allow to cool in the pan for a few minutes, then turn onto a wire rack to cool completely.
Step 6
When the donuts are cool, make the glaze. Whisk the powdered sugar, 2 tablespoons of milk, and vanilla in a medium bowl until smooth. Add more milk or powdered sugar to adjust the consistency as needed.
Step 7
Dip the tops of the cooled donuts into the glaze, letting the excess drip off. Place back on the wire rack and add sprinkles if desired. Let glaze set for about 15 minutes before serving. Enjoy!
