Step 1
Wash glutinous rice to remove excess starch & soak overnight.
Step 2
Lightly spray an 8” square tin with vegetable oil.
Step 3
Pour in drained glutinous rice, coconut milk, water, salt & mix well. Add in Pandan Leaves/flavouring if desired. Ensure all rice is covered with the liquid.
Step 4
Steam for 20 minutes. Remove pandan leaves & fluff up the rice. Pour in blue pea flower water/diluted blue food colouring (in patches).
Step 5
Fluff up the rice again & steam for another 15-20 minutes until cooked.
Step 6
Remove pan from steamer & press the rice flat until it is well compressed & allow to cool.
Step 7
Slice & serve with Dollee Kaya.
