French Orange and Almond Flourless Cake


· 2 medium oranges, about 1 & 1/2 cups when pureed· 2 & 1/2 cups almond meal· 3/4 cup sugar· 5 medium eggs· 1 tsp baking powder· 1/3 cup sliced almonds


Step 1In a medium saucepan, place oranges and add enough water to submerge the oranges. Cover saucepan with a lid and bring to a boil.Step 2Once the water boils, lower the heat and keep simmering for 2 hours.Step 3Drain oranges.Step 4Preheat oven to 180°C (350°F).Step 5Grease and dust an 8-inch baking pan with flour.Step 6Slice the oranges into quarters and remove the bitter part in the middle, as well as the main eye in the middle.Step 7Place the sliced oranges in a food processor and pulse until you get a smooth puree.Step 8Add almond meal and sugar. Mix until thoroughly combined.Step 9Add eggs and baking powder. Mix until you get a smooth cake mixture.Step 10Pour cake mixture into greased and floured baking pan.Step 11Use a spatula to even out the top of the cake mixture.Step 12Sprinkle sliced almonds on top of the mixture.Step 13Place baking pan in the lower part of the oven for 55 to 6 minutes.Step 14Set aside for at least 30 minutes, to cool down and then remove the cake from the pan.Step 15Serve. (Dust with some powdered sugar or more sliced almonds, if desired.)
