Fresh Cucumber Salad

I read the reviews & cut the sugar in half; glad that I did.  I didn't have fresh dill, so I used dried dill with 1/3 the amount to compensate.  We really like this & will definitely be having it often in the summer months.

So fresh, so delicious! For best results let sit overnight, but honestly, I have made this and served it within an hour. I love to add super-thin sliced onions. Good either way!

Its a good recipe, i just wish i read the reviews first. You definely need to reduce the sugar by half, i had to make a tangy french dressing to cut the syrupy sweet taste!

I've been making this recipe for years. Only difference: red wine vinegar, double the sugar, no water, salt and pepper. Add red onion rings, julienned red peppers, cherry tomatoes halved. Yum!!!

I used small, Persian cucumbers.  I, too used red wine vinegar and cut back the sugar by half.  Added a little red onion for color.  A keeper!!!

I actually found this recipe on allrecipes.com.  I used some suggestions to replace 1/4 of the sugar with cider vinegar, dissolved the sugar in the vinegars in a saucepan over low heat, soaked the cucumbers in ice water for 30 minutes then drained, and used 2 tsp dried dill and 1 tsp dill seed instead of fresh dill.  After 24 hours - disappointing.  After 3 days - pretty good!  After 6 days - my husband called his mother to tell her how good they were.  After 7 days - the entire 1/2 gallon is gone.

This is sickeningly sweet. I took it to a potluck and we had to drain and copiously rinse the cucumbers with water, add vinegar, salt and salad dressing to save the dish. I would rate this recipe a negative 3. A loss on on how to murder cucumbers.

Do not add water to this as the Cucumbers give off their own juice. Also plz peel them if not they are tough to eat. Also use apple cider vinagar, sugar, a bit of oil, salt, pepper and sliced onion. But just enough to coat. Finish with fresh Dill on top. Refridgerate then serve. Trust you will have enough juice with out the water. Good greif.

Suppose if you want candied cucumbers, this is yummy.  Just realize each and every serving has over a tablespoon of sugar - you could eat half a Snickers and at least get some protein!!!!!!

These were ok but even though I tried to like them I really didn't think they had much taste. Lots of cucumber salads out there that are much better.

Try switching out the white vinegar with White Wine Vinegar.  Makes a world of difference, still delicious either way. :)

This is a favorite. I usually slice cucumbers & soak in salted ice water overnight in the fridge before putting the recipe together. It keeps the cukes crisp.

I've done these not from your recipe but one from a tv show. VERY similar to yours but she adds a very small amount of flavorless oil and celery seed. I didn't add the celery seed. it is so good and fresh. great idea for a party too, thanks for sharing.

Great salad for a hot summer day. Serve it next to tuna salad for a low-carb lunch.

We used small fresh cucumbers - unpeeled and followed the recipe ... They were wonderful -crisp and tangy...  had to buy more small cucumbers to make another batch -might cut back on the sugar but why ???

Delicious!  This dish reminds me of the traditional southern marinated cucumbers.  I used small salad cukes and did add a little sliced sweet onion to the mix and used fresh parsley this time.....next time will try it with the dill.  The dressing is wonderful!  This refreshing salad will definitely be in my fridge all summer long!Volunteer Field Editor

Very old recipe used in my family for generations.

I use rice wine vinegar and a little bit of sesame oil. Love it.

Delicious, I used 1/2 the sugar and rice wine vinegar.  You can add more cucumber to the dressing for the next day.  I'll make this again.    Janet VFE

Very good. I also add tomatoe wedges when there is a bumper crop.
