Step 1
Transfer the hazelnuts to a small, heat proof container. Pour boiling hot water over the nuts and allow to soak, covered, for two hours or overnight.
Step 2
Transfer the carrots to a microwave safe container. Add 2 tablespoons of water and cook, covered, on high heat until very tender, about 4 - 5 minutes. Drain well.
Step 3
Drain the nuts and transfer to a blender jar. Add the carrots and the remaining ingredients and blend on high power until very smooth.
Step 4
Transfer the mixture to a small saucepan and place on high heat. When the gravy begins to boil, reduce the heat slightly and stir until it thickens to a desired consistency.
Step 5
Adjust seasonings to taste. Transfer to a pitcher and serve.
