Step 1
In a bowl whisk together the egg with milk, olive oil, salt and pepper . Once combined, sift in the oat flour and stir well until all ingredients are combined and the batter is smooth.
Step 2
Heat a medium non stick skillet or crepe pan with little oil or butter over medium heat.
Step 3
Scoop out some of the batter over the pan and move the skillet in a circular form to spread the batter evenly. Cook over medium heat for 1 to 2 minutes and flip, then transfer to a plate.
Step 4
Once they are ready, fill each crepe with one slice of ham and cheese. Wrap to make an ham and cheese roll up and serve. For a tastier meal, I recommend passing the crepes over hot pan for about 30 seconds to 1 minute. This will allow the cheese to melt.
