I've been making something similar for years. Fresh and delicious! I add zucchini slices and small chunks of mozzarella cheese, then top with fresh basil when ready to serve. Thank you for a reminder.

I make them all the time. However, much better with extra virgin olive oil and a splash of white wine vinegar. Finish with sea salt and fresh ground pepper and a sprinkle of sugar to taste. The dressing is so good and fresh you will want to drink it!

I used 1 pint grape tomatoes which I cut in wedges, 1 shallot, thinly sliced, as I did not have a red onion available and 1/3 to 1/2 cup of prepared Italian dressing.  I LOVED this recipe!  It\'s a keeper!

I use to work for a restaurant that made this but they added green peppers to it also. It was always gone at the end of the night. I have made that way for potlucks now and everyone loves it.

Very tasty and a great addition to a meat and potatoes meal or for a picnic if you use the italian dressing!

Italian Cucumber Salad  This is a wonderfully refreshing salad.  It\'s easy to put together.  I\'ve made it several times, and the leftovers are great blended with V-8 for a delicious cold soup.

This is a great go-to salad that is perfect for taking to a pot luck or adding to your own family's meal. Very flavorful for so few ingredients!

This was awesome! Made a triple batch, for a funeral luncheon. Everyone loved it and the pan was empty at the end of the luncheon! Looking forward to make again!
