Keto Chipotle Chicken Avocado BLT’s


· 4 slices bacon· 2 5 oz chicken breasts· 1 avocado (sliced (125g))· 1/4 sliced red onion (40g)· Sliced tomato (60g)· Butter lettuce· 2 slices Jack cheese· 2 keto buns (we use this recipe)· 2 tablespoons mayonnaise· 1 tablespoons minced chipotle in adobo sauce


Step 1Fry the bacon in a 10.5″ cast iron skillet until crispy, remove and reserve the fat in the skillet.Step 2Season the chicken with salt and pepper, place in the skillet with the bacon fat over medium heat. Cook chicken about 5-7 minutes per side until cooked through.Step 3In a small bowl mix together the chipotle mayo. Toast the buns if desired.Step 4Assemble the sandwiches and dig in!
