Step 1
Preheat the oven to 350 degrees.
Step 2
Add the ingredients for the cookies to a mixing bowl, and blend until well combined.
Step 3
Form the mixture into 16 evenly sized balls, and flatten slightly with the palm of your hands.
Step 4
Place the cookies onto a parchment lined baking sheet, and bake for 10-15 minutes until cooked through.
Step 5
Allow the cookies to cool to room temperature.
Step 6
Blend together the ingredients for the filling until smooth.
Step 7
Turn one cookie upside down, and place some of the filling on the flat surface of the cookie.
Step 8
Add another cookie flat side down on top of the filling to form a whoopie pie.
Step 9
Repeat steps 7 and 8 until you have made eight whoopie pies.
