Trim any visible fat from your pork chops.

In a small bowl combine the water, sugar and salt and whisk until it dissolves.

Add basil, lemon zest and juice, and pepper. Mix well.
Step 4
Add the pork chops to a resealable plastic bag and pour in the brine mixture; then refrigerate for 2 hours.
Step 5
Take the pork out of the refrigerator approximately 15 minutes prior to cooking so that the meat comes to room temperature; discard the marinade.
Step 6
Heat the grill and cook the pork chops until the internal temperature reaches a minimum of 145 degrees.
