Oatmeal Chocolate Chip Cookies

Step 1

Preheat the oven to 350 degrees.

Step 2

Grease a baking sheet or line with a silpat or parchment paper.

Step 3

In a large mixing bowl or bowl of a stand mixer add the oatmeal, flour, sugar, brown sugar, baking soda, salt, canola oil, eggs and vanilla and mix until combined. The dough will be crumbly. Mix in the chocolate chips.

Step 4

Using your hands clump together a tablespoon of dough and place on prepared baking sheet (the balls with be crumbly. This is ok, they will combine while baking.). Repeat with remaining dough.

Step 5

Bake for 10 -12 minutes or until set and golden.

Step 6

Let cool five minutes.
