Step 1
Preheat the oven to 220°C / 440°F (fan-forced).
Step 2
In a large baking tray, place the onion, garlic, chicken, vegetables, spices and rice.
Step 3
Pour over the passata and broth (or stock) and mix well to combine all of the flavours and ingredients.
Step 4
Cover the dish tightly with foil and put in the oven for 30 mins.
Step 5
After 30 mins reduce the oven to 200°C / 400°F.
Step 6
Uncover, mix in the beans, top with the cheese and bake (uncovered) for another 20-30 mins.
Step 7
Remove from the oven and scatter over the fresh tomato, coriander leaves, spring onions, avocado and optional jalapenos.
Step 8
Squeeze over the lime juice.
Step 9
Re-heat the tray bake (covered) in a low oven until just hot. Serve as above.
Step 10
Store in an airtight container in the fridge or freezer.
