Step 1
Preheat oven to 325F and line a baking sheet with parchment paper.
Step 2
In a large bowl, combine the rolled oats, coconut and peanuts. I used salted peanut butter + peanuts in this recipe, but if yours are unsalted, add 1/4 tsp of sea salt to the mixture.
Step 3
In a small bowl, mix the peanut butter, maple syrup and vanilla until smooth. Add the wet mixture to the dry ingredients and mix until evenly coated.
Step 4
Transfer the granola mixture to the baking sheet and evenly spread it across in one layer, pressing it down with your hands to flatten it. This will maximize the crunchiness!
Step 5
Bake for 20 min on the BOTTOM rack of the oven, then rotate the baking sheet the other way and bake for another 5 minutes.
Step 6
Let cool for a few minutes, then add the chopped vegan chocolate and mix. Let cool completely so that the chocolate can harden.
Step 7
Store leftovers in an airtight container in the fridge. Enjoy!
