Step 1
Put 100g of sugar in a saucepan, bring to the heat under low and wait for it to melt and turn into caramel. Pour into the cake pan/tin to set.
Step 2
In a separate bowl, mix the sugar with a teaspoon of flour a pinch of salt. Whisk the eggs in with the mixture into until it's constant and frothy.
Step 3
To prepare the pudding, boil the milk with a vanilla bean opened in half and lemon peel. Let it cool until it is at least warm.
Step 4
Take the milk off heat and stir into the egg mixture being careful that you don't over stir.
Step 5
Preheat your oven to 180 degrees. Strain the mixture and pour into the cake pan/tin. Put the tin in a water bath (pan of water) to prevent it from drying out. Bake for 30 minutes.
Step 6
When finished, wait for it to cool down a bit and then put a plate over the pan and flip the tin/pan over onto the plate.
