Step 1
For the lemongrass syrup: In a medium saucepan combine sugar and water. Bring to a boil, stirring until sugar dissolves.
Step 2
While mixture is still hot, add lemongrass and press down so it doesn’t float. Add lemon juice. Cover with aluminum foil and allow to cool.
Step 3
In a blender, mix vodka, raspberries, orange juice and lemongrass syrup.
Step 4
Pour into a copper mug, and add ice. Ideally, the cup’s volume should be about 16 to 20 ounces.
Step 5
Pour in ginger beer to fill the cup.
Step 6
Stir gently and serve.
