Cut each apple quarter into 4 slices. Saute the apples in the vegan butter for 5 minutes. Add 4 tablespoons of maple syrup, and ½ the cloves and cinnamon. Stir the apples into the mixture to coat. Cook for 7 minutes more, until the apples are tender and the syrup thickens. Scoop the mixture into a medium sized bowl, and chill for 1 hour. In another medium sized bowl, combine the yogurt andn1 tablespoon maple syrup and the remaining cinnamon. Chill for at least 1 hour. When ready to serve place the apples into each dish. Spoon the yogurt over the top and sprinkle with the nuts.
