Export 6 ingredients for grocery delivery
Step 1
Cut tomatoes into chunks, discard core and chop in chopper, food processor or blender (You don't need to remove the skin and seeds). Doesn't have to be fully pureed, some chunks are fine.
Step 2
Pour 7-ounces tomato puree into each ice mold cup. And freeze for 12+ hours or until solid frozen. (each "ice mold cup" makes about 1 pint shave ice or about 1 serving) Should make 2-3 frozen ice mold cups depending upon size of tomatoes.
Step 3
Open up burrata cheese or cut into four portions. Lay out on platter or individual bowls. (you can make 1 platter to share or individual portions)
Step 4
Follow manufacturer directions to shave your tomato ice pucks over the burrata. I use the fine blade for the KitchenAid Shave Ice Attachment
Step 5
Drizzle with balsamic glaze, olive oil and sprinkle with salt and pepper if desired.
Step 6
Garnish with basil leaves if desired.
