Liberally season the pork belly with the rub.

Prepare smoker to 265 degrees f. with a fruit wood such as cherry.

Smoke the belly for 3-4 hours.

Lay out a piece of aluminum foil large enough to completely wrap the belly.
Step 6
Add the belly and the apple juice to the foil and wrap it up tightly.
Step 7
Return to the smoker and continue to cook until it reaches an internal temperature of 190-195 degrees f.
Step 8
Carefully remove the pork from the foil.
Step 9
Cube the belly into 1 inch pieces.
Step 10
Toss with the sauce and set aside.
Step 11
On a hot griddle, grill, or large skillet, heat the tortillas until warmed through.
Step 12
Serve with the cilantro, onion, and lime wedges on the side.
