Step 1
Drain any liquid from the tinned tuna and then flake the tuna in a bowl using a fork to break up the pieces.
Step 2
Add the mayonnaise to the flaked tuna fish and mix together to coat everything.
Step 3
Add the drained sweetcorn, the peppers, onion and chilli and mix well.
Step 4
Tip the grated Cheddar cheese into the tuna and sweetcorn mayonnaise and mix through gently.
Step 5
Season the tuna and sweetcorn with salt and black pepper if using. Then sprinkle in the chopped flat leaf parsley. Stir everything together gently.
Step 6
Serve - as salad, in a potato, with pasta or in sandwiches
