Preheat oven to 210C/190C fan forced. Spray a large non-stick baking tray with oil. Spread the potato slices over the prepared tray and sprinkle with the barley. Season. Spray well with oil. Bake for 15-20 minutes or until the potatoes are just starting to soften.
Step 2
Meanwhile, combine mince, lemon rind, dried herbs and oregano in a bowl. Season. Roll tablespoonfuls of the mixture into balls.
Step 3
Top the potato mixture with the meatballs, capsicum, onion and zucchini. Pour over lemon juice and drizzle with oil. Bake for 25-30 minutes or until the meatballs are cooked through and the potato is tender. Sprinkle with extra oregano and serve with lemon wedges, if using.
