Slow Cooker Meatballs

Slow cooker meatballs

Heat the <a href="https://www.bbcgoodfood.com/howto/guide/slow-cookers-and-how-use-them">slow cooker</a> if necessary. Heat the oil in a <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">non-stick frying pan</a> and add the onion, carrots, celery and garlic and fry gently for a minute. Pour in the passata, add the parsley and stir, then transfer the lot to the slow cooker.

To make the meatballs, tip the mince into a large bowl. Add the oats, paprika, garlic and plenty of black pepper, and mix everything together with your hands. Divide the mixture into 20 lumps about the size of a walnut and roll each piece into a meatball. Spray or run a non-stick pan with a little oil and gently cook the meatballs until they start to brown. Add them to the tomato base and cook on Low for 5 hours. Serve over rice or pasta if you like, or with a green salad.

Mediterranean turkey-stuffed peppers

red peppers (about 220 grams)

½ tbsp olive oil,

lean turkey breast mince (under 8% fat)

garlic clove, grated

3-4 mushrooms, sliced

Heat oven to 190C/170C fan/gas 5. Halve the peppers lengthways, then remove the seeds and core but keep the stalks on. Rub the peppers with a drizzle of olive oil and season well. Put on a baking tray and roast for 15 mins.

Meanwhile, heat 1 tbsp olive oil in a large pan over a medium heat. Fry the mince for 2-3 mins, stirring to break up the chunks, then tip onto a plate.

Wipe out your pan, then heat the rest of the oil over a medium-high heat. Add the onion and garlic, stir-fry for 2-3 mins, then add the cumin and mushrooms and cook for 2-3 mins more.

Tip the mince back into the pan and add the chopped tomatoes and tomato purée. Crumble in the stock cube and cook for 3-4 mins, then add the oregano and season. Remove the peppers from the oven and fill them with as much of the mince as you can. (Don’t worry if some spills out it – it will go satisfyingly crisp in the oven.) Top with the cheese and return to the oven for 10-15 mins until the cheese starts to turn golden.

Carefully slide the peppers onto a plate and serve alongside a pile of your favourite greens blanched, boiled or steamed.

These Thai-style patties are a healthy alternative to the regular burger patty with the addition of turkey mince.

(about 600 grams) desiree potatoes, cut into 5mm-thick slices

(1/3 cup) cooked pearl barley (see tip)

Pair subtly spiced sumac turkey meatballs with sweet-and-sour slaw for a vibrant dinner. This recipe takes just 25 minutes to make and is budget-friendly, too

Sumac turkey-stuffed pittas

sumac

garlic clove, crushed

lemon,

mint, leaves

½ red onion,

½ cucumber, deseeded and chopped

pomegranate seeds

pittas, toasted (gluten-free, if needed)

dairy-free natural yogurt, to serve

Tip the mince, sumac, cumin, garlic and lemon zest into a bowl, season and combine using your hands. Form into 10 small balls, about 30g each. Heat the oil in a pan over a medium heat and fry the balls for 8-10 mins, shaking the pan now and then until browned and cooked.

Combine the cabbage, mint, onion, cucumber and pomegranate seeds with the lemon juice. Season. Stuff the slaw and meatballs into the pittas and serve with the yogurt.

Baking enchiladas in a tomato sauce transforms them from mere sandwiches into a proper, healthy dinner. These are stuffed with turkey but you could easily subsitute in chicken.

Each serving provides 342kcal, 25g protein, 40g carbohydrate (of which 8g sugars),	19g fat (of which 8.5g saturates), 5.5g fibre and 1.5g salt.
