Step 1
Preheat oven to 425F. Pierce a sweet potato several times and place on a parchment-lined baking sheet. Bake for about 45 minutes or until fork is easily inserted. Allow potato to cool and remove the peel. Mash up and measure out 1 cup.
Step 2
Add mashed potato to a food processor along with almond butter, dates, and eggs. Process until you reach a smooth consistency — this may take several minutes.
Step 3
Add cocoa/cacao powder, vanilla, cinnamon, baking soda, salt, cayenne pepper, Organixx Clean Sourced Collagens powder, and coconut. Process again. Fold in chocolate chips and walnuts, if using.
Step 4
Preheat oven to 350F. Spread batter in a lined 8” x 8” baking pan and bake at 350F for about 30 minutes (start checking around 23 minutes).
Step 5
Remove pan from oven and allow brownies to cool before serving. Enjoy!
