Step 1
1. Preheat a nonstick skillet over medium-high heat with 1 tbsp of olive oil for 1 minute. Sauté the diced onions for 3-5 minutes, stirring occasionally, until the edges of the onions start to brown. Set onions aside.

2. In the same nonstick skillet over medium-high heat, drizzle 1 tbsp of olive oil and sear the steak, tossing occasionally, until caramelized on all sides. About 2-3 minutes per side. Set the steak aside.

3. Lay out each tortilla on a flat surface. Spread 2 tbsp of BBQ sauce on each tortilla in an off-center line.

4. Divide the steak into four even portions and sprinkle the pieces in a line over the sauce on each tortilla.
Step 5
5. Sprinkle 2 tsp of sautéed onions over the steak, followed by the tater tots and a pinch of cheddar for each tortilla. Top with 2-3 of Fritos corn chips, or as many as it takes to make a line across the tortilla.
Step 6
6. Roll up the tortilla like a burrito and toast on a skillet over medium-high heat, without oil, for 2 minutes per side until brown and crispy.
