Pre-heat the oven to 350 degrees, and line a large baking sheet with parchment paper.On a clean, dry surface, roll out both sheets of puff pastry.Sprinkle the walnuts evenly over the surface of both pieces of dough.Combine the cinnamon, nutmeg and sugar in a large bowl. Sprinkle half of the mixture over the walnuts and pour the other half on to a large plate or cutting board.Working with one sheet of dough at a time, roll both sides inward until they meet in the middle and form a heart-shaped log. Roll the log in the remaining sugar mixture to coat, then repeat with the second sheet of dough.Place the dough logs on a plate and refrigerate for 30 minutes.Once chilled, use a very sharp knife to slice each log into ½-1 inch pieces. Place sliced pieces on the prepared baking sheet, leaving about 2 inches between each piece.Bake for 20 minutes until pastry is golden brown and puffy.
