Preheat oven to 400.
Step 2
Using a mandolin or a very sharp knife, cut slices of the sweet potato in ¼ inch slices.
Step 3
Lay them down on a parchment lined baking sheet in one layer.
Step 4
Mist a light layer of baking spray or brush melted butter over the surface of the slices.
Step 5
Sprinkle with the ginger, cinnamon, salt and brown sugar. Pat lightly to make it stick.
Step 6
Turn them over and repeat on the other side.
Step 7
Bake them for 20 minutes. If they aren’t crispy enough, leave them in for another 5 – 8 minutes.
Step 8
Serve immediately, and enjoy!
