Step 1
Peel the shell off the prawns, leaving the head and tail intact. Make a shallow cut along the centre back using the tip of a small, sharp knife; lift the vein out in one piece.

Combine coriander, garlic, peppers, green onion, sugar and fish sauce in a large bowl; toss prawns in marinade to coat. Cover; refrigerate for 30 minutes.
Step 3
Meanwhile, make the green chilli sauce: Place ingredients in a small food processer; process until finely chopped. (Makes ½ cup.)
Step 4
Preheat a 7-litre air fryer to 200°C for 5 minutes.
Step 5
Spray the air fryer basket with cooking spray. Taking care, place half the prawns in the basket and spray generously all over with cooking spray; at 200°C, cook for 10 minutes or until golden and crispy. Transfer to a plate and cover to keep warm. Repeat cooking remaining prawns, spraying with more cooking spray.
Step 6
Scatter prawns with coriander sprigs. Serve with green chilli sauce.
