Arrange a rack in the middle of the oven and heat the oven to 300°F.

Place 3 cups rolled oats, 1/2 cup maple syrup, 1/4 cup olive oil, 1 teaspoon pumpkin pie spice, and 1 teaspoon kosher salt in a large bowl and stir to combine. Whisk 1 large egg white in a small bowl until frothy, then pour it over the oat mixture and stir everything to combine. Transfer to a rimmed baking sheet and spread out into an even layer.
