Preheat oven to 400 degrees F.

Thaw one sheet of puff pastry overnight in the refrigerator or on the counter.

Trim the ends of the asparagus to remove the tough woody stems.
Step 4
Once the pastry is thawed, unfold and roll out the dough until the folding lines disappear. Transfer the puff pastry dough and the parchment paper directly to the baking sheet.
Step 5
Brush the pastry with olive oil, sprinkle half of the Mozzarella and Parmesan cheese over the pastry. Line up the asparagus over the cheese and then sprinkle the remaining cheese over the top. Drizzle remaining olive oil over the tart and asparagus.
Step 6
Bake for 20 minutes, or until the pastry is puffed and the asparagus has cooked.
Step 7
Sprinkle with salt, black pepper, and red pepper flakes if using. Sprinkle pea shoots or microgreens over the tart before serving.
