Preheat the oven to 180°C/350°F (fan forced).

In a small pot, melt the butter and add capers, garlic and zest. Set aside.

Pat the fish dry with a paper towel.

Slice the lemon thinly into rounds.
Step 5
Lay out the slices of lemon on an oven tray and top with the fish.
Step 6
Pour over the butter mix, season with salt and pepper and bake for 8-15 minutes or until the fish is cooked through. The cook time will depending on the type and thickness of the fish fillets. The fish in the photo is snapper and it took 14 minutes. I’ve made this with flat head too and it took 8 minutes.
Step 7
With chopped parsley.
Step 8
With a side salad or steamed veggies.
Step 9
Make the lemon butter ahead but bake fresh.
Step 10
In an airtight container in the fridge.
