Combine marmalade, soy sauce and mustard in a large bowl. Add chicken and toss to combine. Transfer chicken mixture to the tray and top with orange. Drizzle with remaining oil and any remaining marmalade mixture.
Step 3
Bake, basting with pan juices every 15 mins, for 1 hour or until chicken is golden and cooked through. Sprinkle with spring onion to serve.
