Ingredients: 12 ounce can fat-free evaporated milk; 14 ounce can light coconut milk; ½ cup powdered sugar; 2 teaspoons coconut extract; cinnamon ( to taste); 1/2 cup shredded sweetened coconut

These homemade coconut popsicles are rich, creamy, and super simple to make! They’re the perfect summertime refresher.

Coconut Popsicles

Coconut Cream

Cinnamon

sweetened coconut

Mix all ingredients in a bowl.

Pour into freezer molds.

Freeze and Enjoy!!

I’ve now made four flavors of the popsicles/pops; I wanted a variety.  They are all excellent but this may be my favorite. It’s creamy like ice cream when you want that decadent feeling.  Yum!  Tomorrow I think I will make the avocado ones - I may even experiment and do half with chocolate. I love your recipes; they are usually very forgiving and flexible.

I love coconut pops! These came out delicious! I never thought making coconut pops would be so simple. Definitely a great summer treat.
