Soak cashews in filtered water for 2 hours or overnight to soften.
Step 2
Drain cashews and add them to a high-speed blender along with milk, yogurt, yeast, shallots, garlic, lemon juice & zest, oil, salt, and cayenne pepper. Blend until smooth and creamy. Taste and adjust seasonings, if needed.
Step 3
Preheat oven to 375F. Grease an 8×11 oven-safe pan or an 8- or 9-inch cast iron skillet. Add chopped spinach and artichokes to pan. Pour cashew mixture over top. Stir together. Add garnishes, if desired.
Step 4
Bake in preheated oven for 15-20 minutes or until hot and thick.
Step 5
Enjoy with your favorite vegetables/crackers/pita bread, etc.
