Remove stems from leaves. Discard stems.
Step 2
Chop kale leaves and place in a large bowl.
Step 3
Add a generous drizzle of olive oil and about 2 teaspoons apple cider vinegar or fresh lemon juice. If you want more acidity, you can add another teaspoon of vinegar or lemon juice, to taste. Add a pinch of salt.
Step 4
Massage with your hands for 1-2 minutes, until softened and tender. You'll notice that the kale will reduce. Make sure you don't massage for too long, or it will become mushy.
Step 5
