Step 1
In a 9 x 13 inch baking pan or dish, whisk together eggs, pumpkin puree, ground cinnamon, pumpkin pie spice, milk, vanilla extract and brown sugar until combined.
Step 2
Heat a large frying pan or griddle to low-medium heat. Lightly grease with butter and dunk 4 slices of bread into the pumpkin batter. Poking each slice a few times with a fork and then flip. Make sure each side of the bread is covered completely in the batter.
Step 3
Gently shake off any excess batter on each bread slice and grill for 2-4 minutes on each side until golden brown. Flip and continue to fry until both pieces are golden brown and the bread seems to be fluffy. Transfer the cooked french toast to a large platter or dish and repeat with the remainder 4 slices of bread. Make sure to keep buttering the frying pan (this will make it get golden brown). Serve immediately. Some optional toppings are butter, maple syrup, powdered sugar, whipped cream, and/or cinnamon.
