Step 1
Preheat the smoker to 250°F and add your favorite wood pellets.
Step 2
If you are using your own favorite rub, go ahead and season the pork chops. Or you can make my simple pork rub by mixing chile, brown sugar, and salt in a small bowl. Generously cover the pork chops with the rub mixture.
Step 3
Oil the smoker rack and place the pork chops in the smoker and let it cook for about 2 hours or until internal temperature reaches 145°F.
Step 4
Once the pork chops are done cooking, fire up your grill on medium high heat for direct grilling. Brush the pork chops with olive oil and grill for 2 to 3 minutes on each side. This will give it more flavor and crust on the pork chops.
