You've got to try this mocktail that works as a cocktail: the Raspberry Lime Rickey! Impress everyone with this easy drink.

Raspberry Lime Rickey

(2 tablespoons) fresh lime juice

raspberry syrup (purchased

For a cocktail: 2 ounces gin (optional)

(1/2 cup) soda water

For serving: Ice (try clear ice), lime wedges, fresh raspberries

Add the lime juice, optional gin, and syrup to highball glass and stir.

Fill with ice and top with sparkling water. Garnish with lime wedges and fresh raspberries.

This is a nice cocktail. I used home made raspberry syrup that I made by boiling some frozen raspberries, sugar, some water and a little vanilla extract.  I made the cocktail with London Dry gin. I think it has a bit of a fruit punch flavor, but it is not sweet at all. It has a good amount of raspberry syrup.  Thanks for the recipe. Cheers!
