Step 1
Preheat oven to 180°C. Cut a horizontal slit around each apple (don't cut all the way through) to prevent skin splitting during cooking.
Step 2
Combine the butter, almonds, raisins and half the sugar in a bowl.
Step 3
Divide mixture among apple centres. place in a baking dish. Sprinkle the remaining sugar around apples. Pour over the water and rum. Bake for 35 minutes or until the apples start to soften. Add pouring cream and bake for a further 5 minutes or until apples are soft. Transfer apples to serving plates. Stir the brown sugar sauce until smooth and drizzle over the apples. Serve with double cream.
