Step 1
Finely chop the parsley and oregano leaves and add to a small bowl. Grate in the garlic clove directly into the bowl. Add the lemon zest, lemon juice, salt and olive oil to the bowl and stir to combine.
Step 2
Add the shrimp to a mixing bowl and top with 2 tablespoons of the sauce, stir to combine. Thread the shrimp onto metal skewers** and let marinate for no longer than 15 minutes.
Step 3
Preheat an outdoor grill or grill pan to medium-high heat and oil the grates. Once the grill is hot, place the shrimp skewers on the grill. Cook for 3 minutes, until the shrimp tails are pink and the skewers easily remove from the grill. Flip and cook for an additional 3 minutes, until cooked through. Remove to a plate. Drizzle the skewers with the sauce and garnish with lemon wedges. Serve with additional sauce on the side.
