Step 1
Preheat oven to 300°F (150°C) and spray a (silicone) muffin pan with cooking spray or grease with oil. Place a rack in the center of the oven and add a second rack beneath it. Fill a large baking pan with water and place it in the lower rack to create steam.
Step 2
Add to a blender eggs, cottage cheese, salt and pepper. Blend until just combined, but do not overmix. As an alternative you can also whisk all ingredients together in a large bowl.
Step 3
Chop the turkey ham, then add it to the egg mixture along with shredded Gruyère. Use a spatula or fork to combine.
Step 4
Fill ⅔ of each muffin mold. Sprinkle with more diced ham on top, if you desire.
Step 5
Bake in the middle rack of the oven for 25 to 30 minutes, or until they have set in the center. Let cool before serving.
