Step 1
Chop 1 yellow onion (about 1 cup). Finely chop 6 garlic cloves and 1 tablespoon fresh thyme leaves.

Heat 1 tablespoon vegetable or canola oil in a large stainless steel or cast iron skillet over medium-high heat until shimmering. Add the onion and cook, stirring occasionally, until golden, about 5 minutes. Add the garlic and cook 1 minute more.
