Step 1
Using a fork, shred the king oyster mushroom stem to imitate "pulled pork".
Step 2
Mix the tomato sauce, sugar, soy sauce, liquid smoke and paprika. Make sure you mix well until the sugar is dissolved. Add the shredded king oyster mushrooms to the sauce and mix well until fully covered. Set aside to marinate for 10-15 minutes.
Step 3
Add the vegan pulled pork mixture to a medium-sized non-stick saucepan. Heat up on the hob on medium heat until you bring it to a gentle boil. Simmer for 45 minutes, uncovered until the sauce becomes thick and sticky. Stir occasionally to ensure the vegan pulled pork doesn't stick to the pan.
Step 4
You can serve it in a burger bun with a choice of toppings. We used reddish, purple cabbage and corn salad (lamb's lettuce). Alternatively, you can eat it as a sandwich with crusty bread.
