Step 1
Combine turkey, sage, thyme, salt, and pepper in large bowl. Using fork, gently mix until seasonings are evenly incorporated but not overmixed.
Step 2
Place sheet of parchment paper or nonstick foil on work surface. Divide turkey mixture into 8 equal portions and place on parchment using about 2 tablespoons turkey mixture for each. With damp hands, shape into 2 1/2-inch patties (don't worry if edges crack).
Step 3
Generously spray large nonstick skillet with nonstick spray and set over medium heat. Place patties in skillet and cook until sausages are lightly browned and just cooked through, about 2 minutes per side. Serve with eggs of choice.
Step 4
